Easy Quinoa Recipe - for lunch or dinner!

If you haven't tried quinoa, you're definately missing out! For those of you who do not know, qunioa is a seed which can be cooked like rice or barley. It's a great source of fibre and iron, as well as protein.

I love making it for my husband and I - infact it's one of our staple meals now and we prefer it over rice or even pasta...

Here is a super easy recipe for you to try!

Ingredients:
2 cups quinoa
4 cups of water
3 cups of spinach
1 green onion
1/2 avocado
1 cup of cherry tomatoes
1/2 cup of cilantro
2 tsp of extra virgin olive oil (optional) (EVOO)
1/4 cup vegetable broth (optional)

Instructions:
You will need a medium to large size pot to boil water. Once water comes to a boil, add the quinoa and let it cook for 15 to 20 mins, or until the water is fully absorbed. (Optional: you can the vegetable broth when water comes to a boil, and then add quinoa. Vegetable broth just adds more tastes to it)
Chop up all your vegetables and set aside.
Once qunioa is cooked let it cool for a good 10 to 15 mins.
After that, mix all the vegetables and quinoa in a large bowl; add the EVOO and mix everything together.
You can add salt and pepper to taste or even some mild to hot salsa ( that's my preference).

It's that simple!

Honestly, once you make this, you will want to make it all the time!
